Creamy Chicken Salad with Grapes

Ingredients:

  • 3 cups cooked chicken (diced or shredded)
  • 1 cup red seedless grapes (halved)
  • 1/2 cup celery (finely chopped)
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped walnuts or pecans (optional)
  • 2 tablespoons fresh parsley (chopped, optional)

Instructions:

  1. Prepare the chicken:
    Make sure your cooked chicken is fully cooled, then dice or shred it into bite-sized pieces.
  2. Combine the main ingredients:
    In a large mixing bowl, add the chicken, halved grapes, and chopped celery.
  3. Make the dressing:
    In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper until smooth and creamy.
  4. Mix everything together:
    Pour the dressing over the chicken mixture and gently stir until everything is evenly coated.
  5. Add extras (optional):
    Fold in the chopped nuts and parsley for extra crunch and fresh flavor.
  6. Chill before serving:
    Cover and refrigerate for at least 30 minutes to let the flavors blend together.

Serving Ideas:

  • Serve it in sandwiches or wraps
  • Spoon it over fresh lettuce for a low-carb option
  • Enjoy it with crackers as a snack

Tip: For a lighter version, replace half of the mayonnaise with plain Greek yogurt.
