Classic Drop Biscuits (Soft, Fluffy & Buttery)

These easy drop biscuits are a staple in American kitchens. They’re called “drop biscuits” because you simply drop the dough onto the baking sheet—no rolling, kneading, or cutting required. Perfect for breakfast, dinner, or as a quick side!

 Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar (optional, for a hint of sweetness)
  • 1/2 cup (1 stick / 115g) cold unsalted butter, cut into small cubes
  • 1 cup milk (or buttermilk for richer flavor)

 Instructions:

1. Preheat the Oven

Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper or lightly grease it.

2. Mix the Dry Ingredients

In a large mixing bowl, whisk together:

  • Flour
  • Baking powder
  • Salt
  • Sugar

Make sure everything is evenly combined so your biscuits rise properly.

3. Cut in the Butter

Add the cold, cubed butter into the flour mixture.
Using a fork, pastry cutter, or your fingers, mix until the texture becomes crumbly, like coarse sand with small pea-sized bits of butter.

This step is very important because cold butter creates flaky, tender biscuits.

4. Add the Milk

Pour in the milk (or buttermilk) and gently stir with a spoon or spatula just until combined.

Do NOT overmix.
The dough should look slightly sticky and rough. Overmixing will make the biscuits dense instead of soft.

5. Drop the Dough

Using a large spoon or ice cream scoop, drop portions of dough onto the prepared baking sheet.

  • Leave about 2 inches (5 cm) between each biscuit
  • No need to shape them perfectly—rustic is best!

6. Bake

Place in the oven and bake for 12–15 minutes, or until:

  • The tops are golden brown
  • The edges are slightly crispy

7. Finish & Serve

Remove from the oven and brush the tops with melted butter for extra flavor and shine.

Serve warm and enjoy!

 Tips for Perfect Biscuits:

  • Use very cold butter for the best texture
  • Buttermilk makes them softer and slightly tangy
  • Don’t overwork the dough
  • Bake immediately after mixing for best rise

You can easily customize your biscuits:

  • 1 cup shredded cheddar cheese
  • Garlic powder or herbs (parsley, thyme)
  • Cooked bacon bits
