Crockpot Sausage & Potatoes

Ingredients

  • 1 lb smoked sausage, sliced into rounds
  • 5–6 medium potatoes, peeled and cut into chunks
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • 1 cup shredded cheddar cheese (optional)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Prepare the ingredients
    Wash, peel, and cut the potatoes into bite-size chunks. Slice the smoked sausage into thick rounds and chop the onion.
  2. Layer in the crockpot
    Place the potatoes at the bottom of the crockpot. Add the sliced sausage, chopped onion, and minced garlic on top.
  3. Season the dish
    Sprinkle salt, black pepper, paprika, and dried thyme over the ingredients. Drizzle with olive oil.
  4. Add the broth
    Pour the chicken broth into the crockpot. This helps everything cook slowly and keeps the potatoes tender.
  5. Slow cook
    Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the potatoes are soft and the sausage is heated through.
  6. Add cheese (optional)
    About 10 minutes before serving, sprinkle shredded cheddar cheese on top. Cover again and allow it to melt.
  7. Serve
    Garnish with fresh parsley if desired. Serve hot as a comforting dinner.

Tips

  • You can add bell peppers or carrots for extra flavor and color.
  • For a creamy version, stir in ½ cup sour cream before serving.
  • This dish pairs well with a simple green salad or crusty bread.
