Crockpot Sausage & Potatoes
Ingredients
- 1 lb smoked sausage, sliced into rounds
- 5–6 medium potatoes, peeled and cut into chunks
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- ½ teaspoon black pepper
- 1 teaspoon salt (or to taste)
- 1 cup shredded cheddar cheese (optional)
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Prepare the ingredients
Wash, peel, and cut the potatoes into bite-size chunks. Slice the smoked sausage into thick rounds and chop the onion. - Layer in the crockpot
Place the potatoes at the bottom of the crockpot. Add the sliced sausage, chopped onion, and minced garlic on top. - Season the dish
Sprinkle salt, black pepper, paprika, and dried thyme over the ingredients. Drizzle with olive oil. - Add the broth
Pour the chicken broth into the crockpot. This helps everything cook slowly and keeps the potatoes tender. - Slow cook
Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the potatoes are soft and the sausage is heated through. - Add cheese (optional)
About 10 minutes before serving, sprinkle shredded cheddar cheese on top. Cover again and allow it to melt. - Serve
Garnish with fresh parsley if desired. Serve hot as a comforting dinner.
