Slow Cooker Beef Roast with Onion Gravy

Ingredients

  • 2–3 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. Season the beef
    Pat the beef roast dry with paper towels. Season all sides with salt, pepper, and paprika.
  2. Sear the meat (optional but recommended)
    Heat olive oil in a large skillet over medium-high heat. Sear the roast for about 3–4 minutes per side until nicely browned. This step adds extra flavor.
  3. Prepare the slow cooker
    Place the sliced onions and minced garlic in the bottom of the slow cooker. Set the seared beef roast on top.
  4. Make the sauce
    In a bowl, mix the beef broth, Worcestershire sauce, soy sauce, brown sugar, and thyme. Pour this mixture over the beef and onions.
  5. Slow cook
    Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef becomes very tender and easily shreds with a fork.
  6. Thicken the gravy
    In a small bowl, mix cornstarch with cold water to make a slurry. Stir it into the slow cooker during the last 20 minutes of cooking. This will thicken the onion gravy.
  7. Serve
    Shred or slice the beef and spoon the rich onion gravy over the top.
