Creamy Ranch Bacon Chicken with Potatoes (Slow Cooker)
Ingredients
- 4 boneless, skinless chicken breasts
- 1½ pounds baby potatoes (whole or halved)
- 1 packet ranch seasoning mix (about 1 oz)
- 8 oz cream cheese, cut into cubes
- 1 cup shredded mozzarella cheese
- 1 cup cooked bacon pieces
- 1 cup heavy cream or milk
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
1. Prepare the slow cooker
Lightly spray the inside of your slow cooker with cooking spray. Add the baby potatoes to the bottom of the cooker so they create a base for the chicken.
2. Add the chicken
Place the chicken breasts directly on top of the potatoes. Season them lightly with black pepper, garlic powder, and paprika.
3. Add the creamy ingredients
Sprinkle the ranch seasoning mix evenly over the chicken. Add the cubed cream cheese on top. Pour the heavy cream or milk over everything so it can melt and create a rich sauce.
4. Add cheese and bacon
Sprinkle the shredded mozzarella cheese and bacon pieces over the mixture. The bacon will add a smoky flavor that blends perfectly with the creamy ranch sauce.
5. Slow cook
Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is tender and fully cooked and the potatoes are soft.
6. Finish the sauce
About 15 minutes before serving, gently stir the sauce to combine the melted cream cheese with the cooking juices to create a smooth creamy sauce.
7. Garnish and serve
Sprinkle chopped parsley on top for freshness. Serve the chicken with the creamy potatoes and plenty of sauce.
Serving Tips
- Serve with steamed vegetables, green beans, or a fresh salad.
- You can also shred the chicken and mix it with the sauce for an even creamier dish.
- If you like extra cheese, sprinkle more mozzarella on top and let it melt before serving.
