Crispy Fried Potatoes & Onions

Crispy Fried Potatoes & Onions

This classic fried potatoes and onions recipe is a simple comfort food that never goes out of style. The potatoes turn golden and crispy on the outside while staying soft and fluffy inside, and the onions become sweet and caramelized as they cook. It’s the perfect side dish for breakfast, lunch, or dinner and pairs beautifully with eggs, grilled meats, or even on its own with a sprinkle of fresh herbs.

Ingredients

  • 4 medium potatoes, peeled and sliced
  • 1 large onion, sliced
  • 3 tablespoons vegetable oil or butter
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1/2 teaspoon garlic powder (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the potatoes
Peel the potatoes and slice them into thin rounds or small cubes. If you want them extra crispy, soak the sliced potatoes in cold water for about 10 minutes, then drain and pat them dry with a paper towel.
  2. Heat the pan
Place a large skillet over medium heat and add the oil or butter. Allow it to heat until it starts to shimmer.
  3. Cook the potatoes
Add the potatoes to the skillet in a single layer if possible. Let them cook without stirring for about 5 minutes so they develop a golden crust on the bottom.
  4. Add the onions
Stir the potatoes gently and add the sliced onions. Continue cooking for another 10–15 minutes, stirring occasionally, until the potatoes are tender and the onions are soft and caramelized.
  5. Season the dish
Sprinkle in the salt, black pepper, paprika, and garlic powder. Stir well so the seasoning coats the potatoes evenly.
  6. Finish and serve
Cook for another 2–3 minutes until everything is nicely browned. Garnish with chopped parsley if desired and serve hot.

Tips for the Best Fried Potatoes

  • Use a heavy skillet like cast iron for the best crispy texture.
  • Don’t overcrowd the pan or the potatoes will steam instead of fry.
  • Let the potatoes sit undisturbed for a few minutes at a time to create that perfect golden crust.
