Cottage Cheese Chocolate Chip Cookies

Ingredients

  • 1 cup cottage cheese
  • 1 1/4 cups rolled oats
  • 1/4 cup honey
  • 1 large egg
  • 1/4 cup mini chocolate chips (plus extra for topping)
  • 1 teaspoon vanilla extract

Optional (for more flavor)

  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese in a blender or food processor until smooth. This helps the cookies have a softer texture.
  3. In a large bowl, mix the blended cottage cheese, honey, egg, and vanilla extract until well combined.
  4. Add the rolled oats, baking powder, cinnamon, and salt (if using). Stir until everything is evenly mixed.
  5. Fold in the mini chocolate chips.
  6. Scoop about 1–2 tablespoons of dough onto the prepared baking sheet. Slightly flatten each cookie with the back of a spoon.
  7. Sprinkle a few extra chocolate chips on top of each cookie.
  8. Bake for 12–15 minutes, or until the cookies are set and lightly golden.
  9. Let the cookies cool for 5–10 minutes before serving.

Tips

  • For smoother cookies, you can blend the oats into oat flour first.
  • Store cookies in the refrigerator for up to 4 days.
  • They are great as a healthy snack or quick breakfast.
