Loaded Grilled Chicken Salad
A fresh, hearty salad packed with juicy grilled chicken, crispy bacon, crunchy veggies, and a creamy dressing. Perfect for lunch or a light dinner!
Ingredients
For the Chicken
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Salad
- 6 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- ½ cup shredded cheddar cheese
- 4 slices cooked bacon, chopped
- ¼ cup red onion, thinly sliced
- 1 hard-boiled egg, sliced
For the Dressing
- ½ cup ranch dressing (or your favorite dressing)
Instructions
- Season the Chicken
Rub the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. - Grill the Chicken
Heat a grill or grill pan over medium-high heat. Grill the chicken for about 5–7 minutes per side, or until fully cooked. Let it rest for a few minutes, then slice. - Prepare the Salad Base
In a large bowl, add the chopped romaine lettuce, tomatoes, avocado, red onion, and cheddar cheese. - Add the Toppings
Top the salad with sliced grilled chicken, chopped bacon, and sliced hard-boiled egg. - Add Dressing & Serve
Drizzle ranch dressing over the salad and toss lightly, or serve the dressing on the side.
Tip: You can also add cucumbers, corn, or croutons for extra crunch.
