Caramelized Ribeye Steak with Creamy Mashed Potatoes

Ingredients
For the Steak & Caramelized Onions
- 1 ribeye steak (about 1 lb / 450 g)
- 1 large yellow onion, thinly sliced
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika (optional)
- 1 teaspoon fresh thyme (or ½ tsp dried)
For the Creamy Mashed Potatoes
- 2 pounds potatoes (Yukon Gold or Russet), peeled and cubed
- 4 tablespoons butter
- ½ cup warm milk or heavy cream
- 2 tablespoons sour cream (optional but delicious)
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
Cook the Potatoes
- Place the peeled and cubed potatoes in a large pot.
- Cover with salted water and bring to a boil.
- Cook for 15–18 minutes until the potatoes are fork-tender.
- Drain well and return them to the pot.
Make the Mashed Potatoes
- Add butter, warm milk (or cream), sour cream, salt, and pepper.
- Mash until smooth and creamy.
- Taste and adjust seasoning if needed.
- Cover and keep warm.
Caramelize the Onions
- Heat 1 tablespoon olive oil + 1 tablespoon butter in a skillet over medium heat.
- Add the sliced onions and cook slowly for 10–15 minutes, stirring occasionally until golden and sweet.
- Add the garlic and cook for 1 more minute.
- Remove onions from the pan and set aside.
Cook the Ribeye Steak
- Pat the steak dry with paper towels.
- Season both sides with salt, pepper, paprika, and thyme.
- Heat the same skillet over medium-high heat with the remaining olive oil and butter.
- Sear the steak 3–4 minutes per side for medium-rare (adjust for preferred doneness).
- Let the steak rest for 5 minutes before slicing.
Assemble the Dish
- Spoon creamy mashed potatoes onto a plate.
- Place the ribeye steak on top or beside the potatoes.
- Add the caramelized onions and garlic over the steak.
- Garnish with fresh herbs if desired.
