Servings

4–6 servings

Ingredients

  • 8 pork sausages (Italian, Irish, or any good-quality sausage)
  • 3 large onions, thinly sliced
  • 1 cup beef broth
  • ¼ cup brown sugar

Optional (for extra flavor):

  • 2 cloves garlic, minced
  • ½ teaspoon black pepper
  • 1 tablespoon soy sauce (adds deeper flavor)

Instructions

1. Prepare the onions

Peel the onions and slice them into thin strips. Spread the sliced onions evenly on the bottom of the slow cooker.

2. Add the sausages

Place the sausages on top of the onions in a single layer if possible. This helps them cook evenly and absorb the flavor from the onions.

3. Make the sauce

In a small bowl, mix together the beef broth and brown sugar until the sugar dissolves. If you’re using garlic or soy sauce, stir it in at this stage.

4. Pour and cook

Pour the sauce over the sausages and onions. Cover the slow cooker with the lid.

Cook on:

  • LOW for 6 hours for the most tender sausages
    or
  • HIGH for 3–4 hours if you’re short on time.

5. Finish the dish

Once cooked, the onions should be soft and caramelized, and the sausages should be juicy and flavorful. Stir gently so the sausages are coated in the delicious onion sauce.

Serving Suggestions

Serve these savory sausages with:

  • Creamy mashed potatoes
  • Steamed white rice
  • Buttered egg noodles
  • Crusty bread to soak up the sauce
  • Roasted vegetables or green beans

Tips for Best Flavor

  • Browning the sausages in a skillet for 3–4 minutes before adding them to the slow cooker adds extra flavor and color.
  • Sweet onions work best because they caramelize beautifully during slow cooking.
  • If you want a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons water and stir it into the slow cooker during the last 20 minutes of cooking.
