Delightful Strawberry Cream Pastries

Ingredients
For the Pastry
- 1 sheet puff pastry (thawed if frozen)
- 1 egg
- 1 tablespoon water
For the Cream Filling
- 1 cup heavy whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 4 oz cream cheese (softened)
For the Strawberry Layer
- 1½ cups fresh strawberries, sliced
- 2 tablespoons sugar
- 1 teaspoon lemon juice

Instructions
Prepare the Strawberries
In a bowl, combine the sliced strawberries, sugar, and lemon juice. Stir gently and let them sit for about 10–15 minutes. This creates a light strawberry syrup and makes the fruit extra flavorful.
Prepare the Pastry
Preheat your oven to 400°F (200°C).
Roll out the puff pastry slightly and cut it into 6 rectangles or squares.
Egg Wash
Whisk the egg with 1 tablespoon of water. Brush the mixture over the pastry pieces to give them a golden color when baked.
Bake the Pastry
Place the pastries on a parchment-lined baking sheet and bake for 12–15 minutes until puffed and golden brown. Let them cool completely.
Make the Cream Filling
In a mixing bowl, beat the cream cheese until smooth.
Add powdered sugar and vanilla extract, then slowly whip in the heavy cream. Continue beating until light, fluffy, and creamy.
Assemble the Pastries
Slice each pastry horizontally like a sandwich.
Spread or pipe the cream filling on the bottom half, add a layer of strawberries, then place the top pastry piece back on.
Garnish
Dust with powdered sugar and top with extra strawberries or mint leaves for a beautiful finish.
