Roasted Potatoes with Caramelized Onions

Ingredients

  • 2 lbs potatoes (Yukon Gold or red potatoes), cut into chunks
  • 1 large yellow onion, thinly sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary or thyme (optional)
  • 1 tablespoon butter (optional, for extra flavor)
  • Fresh parsley for garnish (optional)

Instructions

1. Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

2. Season the Potatoes

In a large bowl, toss the potatoes with:

  • olive oil
  • garlic
  • salt
  • black pepper
  • rosemary or thyme

Mix well so the potatoes are evenly coated.

3. Roast the Potatoes

Spread the potatoes in a single layer on the baking sheet.
Roast for 25 minutes.

4. Caramelize the Onions

While the potatoes are roasting:

  1. Heat 1 tablespoon olive oil or butter in a skillet over medium heat.
  2. Add the sliced onions.
  3. Cook slowly for 15–20 minutes, stirring occasionally, until the onions turn golden brown and sweet.

Caramelizing onions slowly brings out their natural sugars and rich flavor.

5. Combine and Finish Roasting

After the potatoes have roasted for 25 minutes:

  • Add the caramelized onions to the baking sheet.
  • Toss gently.
  • Roast another 10–15 minutes until the potatoes are crispy and golden.

6. Garnish and Serve

Sprinkle with fresh parsley and serve hot.

  • With roasted fish
  • As a breakfast side with eggs
