Ingredients
- 1 pound ground beef
- 2 cups uncooked elbow macaroni
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- 1/2 cup grated mozzarella cheese (optional for extra cheesiness)
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta
Bring a large pot of salted water to a boil and cook the elbow macaroni according to the package directions until al dente. Drain and set aside. - Cook the beef
Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for about 3 minutes until soft. Add the garlic and cook for another 30 seconds. - Brown the hamburger
Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon. Drain any excess fat. - Make the sauce
Stir in the tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Let the mixture simmer for about 5 minutes so the flavors combine. - Mix the casserole
In a large mixing bowl, combine the cooked macaroni, beef mixture, and sour cream. Stir until everything is well coated and creamy. - Assemble
Preheat the oven to 350°F (175°C). Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the shredded cheddar cheese and mozzarella evenly on top. - Bake
Bake uncovered for 20–25 minutes until the cheese is melted, bubbly, and slightly golden. - Serve
Let the casserole rest for about 5 minutes before serving. Garnish with fresh parsley if desired.
