Apple Pie Enchiladas
Sweet, buttery, and loaded with cinnamon apple flavor!
These Apple Pie Enchiladas are a fun twist on classic apple pie. Soft flour tortillas are filled with warm apple pie filling, rolled up, baked in a rich cinnamon caramel sauce, and finished with even more sweetness. Perfect served warm with vanilla ice cream!
Ingredients
- 1 (21 oz) can apple pie filling (or homemade apple pie filling)
- 6 (8-inch) flour tortillas
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter
- 1/2 cup granulated white sugar
- 1/2 cup brown sugar
- 1/2 cup water
Instructions
- Preheat the oven
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. - Prepare the apple filling
If the apple slices are large, roughly chop them so they roll easily inside the tortillas. - Fill the tortillas
Spoon a line of apple pie filling down the center of each tortilla.
Sprinkle a little ground cinnamon over the apples. - Roll the enchiladas
Roll each tortilla tightly like a burrito and place it seam-side down in the prepared baking dish. - Make the caramel sauce
In a saucepan over medium heat, combine:- butter
- white sugar
- brown sugar
- water
Stir constantly until the butter melts and the sugars dissolve. Bring the mixture to a gentle boil, then simmer for 3–4 minutes until slightly thickened.
- Pour the sauce
Pour the warm caramel sauce evenly over the rolled tortillas. - Bake
Bake for 20–25 minutes, until the tortillas are slightly crisp on top and the sauce is bubbling.
Serving Ideas

- Extra caramel sauce
- A sprinkle of cinnamon or powdered sugar
