Melt-in-Your-Mouth Garlic Parmesan Chicken Meatloaf 

A juicy, flavorful twist on classic meatloaf! This chicken version is tender, cheesy, and packed with garlic and Parmesan flavor. Perfect for a cozy family dinner.

Ingredients

For the Meatloaf

  • 2 lbs ground chicken
  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup milk
  • 1/4 cup fresh parsley, chopped (optional)

For the Garlic Parmesan Topping

  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat the oven
    Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. Prepare the meat mixture
    In a large mixing bowl, combine the ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, Italian seasoning, salt, pepper, milk, and parsley.
  3. Mix gently
    Use your hands or a spoon to mix everything until just combined. Avoid overmixing to keep the meatloaf tender.
  4. Shape the meatloaf
    Form the mixture into a loaf shape and place it in the prepared loaf pan or on the baking sheet.
  5. Bake
    Bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Prepare the topping
    In a small bowl, mix the melted butter, Parmesan cheese, garlic powder, and parsley.
  7. Add topping and finish baking
    Remove the meatloaf from the oven, spread the topping evenly over the top, and return it to the oven for 5–7 more minutes until golden and bubbly.
  8. Rest and serve
    Let the meatloaf rest for 5–10 minutes before slicing. This helps keep it juicy.
