No-Bake Chocolate Peanut Butter Oat Bars
These rich and chewy bars have a thick chocolate center layered between sweet oat and peanut butter goodness — and they’re super easy to make!
Ingredients
Oat Layer:
- 2 cups old-fashioned rolled oats
- 1 cup peanut butter
- ½ cup honey or brown sugar
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- Pinch of salt
Chocolate Layer:
- 1 cup chocolate chips
- ½ cup peanut butter
Optional Topping:
- Melted chocolate for drizzling
Instructions
- Prepare the oat mixture:
In a saucepan over medium heat, melt the butter, honey (or brown sugar), and peanut butter together. Stir until smooth and fully combined. Add vanilla and salt. - Remove from heat and stir in the oats until well coated.
- Line an 8×8-inch pan with parchment paper. Press half of the oat mixture firmly into the bottom of the pan.
- Make the chocolate layer:
Melt the chocolate chips and peanut butter together (microwave in 30-second intervals, stirring each time, or use a double boiler). Stir until smooth. - Pour the chocolate mixture evenly over the oat base.
- Crumble and gently press the remaining oat mixture on top.
- Drizzle extra melted chocolate over the top if desired.
- Refrigerate for at least 2 hours, or until fully set.
- Slice into squares and enjoy!
Tips
- Add chopped nuts for extra crunch.
- Store in the refrigerator for up to 1 week.
- You can substitute almond butter for peanut butter if preferred.
