Pineapple Cake Bars
Soft, buttery cake bars topped with sweet, juicy pineapple — simple, moist, and perfect for dessert or tea time!
Ingredients
For the Cake Base:
- 1 box yellow cake mix
- 2 large eggs
- ½ cup unsalted butter, melted
For the Pineapple Layer:
- 1 can (20 oz) crushed pineapple, drained (reserve 2 tablespoons juice)
- 1 package (8 oz) cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons reserved pineapple juice
Optional Topping:
- Powdered sugar for dusting
- Whipped cream
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Make the crust:
In a bowl, mix cake mix, eggs, and melted butter until combined.
Press evenly into the bottom of the prepared pan. - Prepare pineapple filling:
Beat cream cheese and sugar until smooth.
Add vanilla and reserved pineapple juice, mix well.
Fold in the drained crushed pineapple. - Assemble:
Spread the pineapple mixture evenly over the crust. - Bake for 30–35 minutes, or until set and lightly golden on top.
- Cool completely before cutting into bars.
- Optional: Dust with powdered sugar before serving.
Tips
- For extra tropical flavor, add ½ cup shredded coconut.
- Chill before slicing for cleaner cuts.
- Store in the fridge up to 4 days.
