Mediterranean Chicken Zucchini Bake

A hearty and flavorful one-pan Mediterranean dish packed with juicy chicken, tender vegetables, and creamy feta cheese.

Ingredients:

  • 3 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced into rounds
  • 1 pint cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh parsley, chopped (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine the chicken pieces, zucchini, cherry tomatoes, bell pepper, red onion, and garlic.
  3. Drizzle with olive oil and sprinkle oregano, basil, thyme, salt, and pepper. Toss everything well to coat evenly.
  4. Transfer the mixture to a large baking dish and spread it out in a single layer.
  5. Bake for 25–30 minutes, or until the chicken is fully cooked and the vegetables are tender.
  6. Remove from the oven and sprinkle crumbled feta cheese on top.
  7. Return to the oven for 5 more minutes until the feta slightly softens.
  8. Garnish with fresh parsley before serving.

Serving Ideas:

  • Serve with rice, couscous, or warm pita bread.
  • It’s also delicious on its own for a low-carb meal.
