Mediterranean Chicken Zucchini Bake
A hearty and flavorful one-pan Mediterranean dish packed with juicy chicken, tender vegetables, and creamy feta cheese.
Ingredients:
- 3 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium zucchinis, sliced into rounds
- 1 pint cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley, chopped (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, combine the chicken pieces, zucchini, cherry tomatoes, bell pepper, red onion, and garlic.
- Drizzle with olive oil and sprinkle oregano, basil, thyme, salt, and pepper. Toss everything well to coat evenly.
- Transfer the mixture to a large baking dish and spread it out in a single layer.
- Bake for 25–30 minutes, or until the chicken is fully cooked and the vegetables are tender.
- Remove from the oven and sprinkle crumbled feta cheese on top.
- Return to the oven for 5 more minutes until the feta slightly softens.
- Garnish with fresh parsley before serving.
Serving Ideas:
- Serve with rice, couscous, or warm pita bread.
- It’s also delicious on its own for a low-carb meal.
