Philly Cheesesteak Casserole (Low-Point Version)

 Ingredients:

  • 500g lean ground beef (95% fat-free)
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup mushrooms, sliced (optional)
  • 1 tsp minced garlic
  • 1 tsp olive oil
  • 1 tsp light soy sauce (optional)
  • Salt and pepper, to taste
  • ¾ cup shredded light mozzarella cheese
  • 4 slices light provolone cheese (optional)

 Instructions:

  1. Preheat oven to 180°C (350°F).
  2. In a skillet, heat olive oil and sauté onions, peppers, and mushrooms until softened.
  3. Add ground beef and garlic, cook until browned. Drain excess fat.
  4. Season with salt, pepper, and light soy sauce.
  5. Transfer the mixture to a baking dish.
  6. Sprinkle shredded mozzarella over the top and place provolone slices.
  7. Bake 15–20 minutes until cheese melts and lightly browns.

 Points (approximate):

  • About 4–6 WW points per serving (depends on cheese and meat used)
  • Makes roughly 4 servings

If you want, I can also make an even lower-point version (2–3 points) using chicken or turkey instead of beef.
