Slow Cooker Meatballs & Potatoes
Ingredients:
- 1 kg frozen or fresh meatballs
- 4–5 medium potatoes, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup tomato sauce
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon dried oregano or Italian seasoning
- 2 tablespoons olive oil
Instructions:
- If using fresh meatballs, lightly brown them in a pan with olive oil (optional but gives better flavor).
- Place diced potatoes on one side of the slow cooker.
- Add meatballs on the other side.
- In a bowl, mix broth, tomato sauce, tomato paste, garlic, onion, and all spices.
- Pour the sauce evenly over everything.
- Cover and cook:
- Low: 6–7 hours
- High: 3–4 hours
- Stir gently before serving.
Optional:
- Add grated cheese on top during the last 15 minutes.
- Garnish with fresh parsley.
- Serve with bread or rice.
