Classic Cheese Soufflé
Ingredients:
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 1 cup whole milk (slightly warm)
- 4 large eggs (separated)
- 1 cup grated cheese (Gruyère, Cheddar, or any good melting cheese)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- A pinch of nutmeg (optional)
Instructions:
1. Prepare the Dish
- Preheat oven to 375°F (190°C).
- Butter a round glass or ceramic baking dish and lightly dust with flour.
2. Make the Base (Béchamel Sauce)
- Melt the butter in a saucepan over medium heat.
- Add the flour and whisk for about 1 minute.
- Gradually add the milk while whisking to avoid lumps.
- Cook until the mixture thickens.
3. Add Egg Yolks and Cheese
- Remove from heat.
- Quickly whisk in the egg yolks.
- Stir in the grated cheese, salt, pepper, and nutmeg.
4. Beat the Egg Whites
- In a clean bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the cheese mixture using soft upward motions to keep the air inside.
5. Bake
- Pour the mixture into the prepared dish.
- Bake for 25–30 minutes, until puffed and golden brown on top.
- Do not open the oven while baking.
Serving Tip:
Serve immediately after removing from the oven. Soufflé rises beautifully but will deflate quickly.
