Slow Cooker Hamburger Vegetable Soup
Ingredients:
- 1 lb (450g) ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, chopped
- 2 medium potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 cup green beans (fresh or frozen)
- 1 tsp Italian seasoning
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- Optional: 1 cup frozen corn
Instructions:
- In a skillet over medium heat, cook the ground beef until browned.
- Add the chopped onion and garlic and cook for 2–3 minutes. Drain excess fat.
- Transfer the beef mixture to the slow cooker.
- Add carrots, celery, potatoes, green beans, tomatoes, tomato sauce, and beef broth.
- Season with Italian seasoning, salt, and pepper.
- Stir well to combine.
- Cover and cook:
- On LOW for 6–8 hours
- Or on HIGH for 3–4 hours
- Taste and adjust seasoning before serving.
Serving Tips:
- Serve hot with crusty bread.
- You can sprinkle grated Parmesan cheese on top.
- Perfect for meal prep and freezes very well!
