Honey Garlic Balsamic Roasted Red Potatoes

Crispy on the outside, tender on the inside, and coated in a rich sweet-savory garlic glaze. This easy roasted red potatoes recipe makes the perfect side dish for chicken, steak, or fish.

Ingredients

  • 2 pounds red potatoes, cut into bite-size chunks
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme (or Italian seasoning)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2: Prepare the Potatoes

Wash the red potatoes and cut them into evenly sized chunks. Leave the skin on for extra texture and flavor. Pat them dry with a paper towel.

Step 3: Make the Glaze

In a large mixing bowl, whisk together olive oil, minced garlic, chopped onion, balsamic vinegar, honey, soy sauce, thyme, salt, black pepper, and red pepper flakes.

Step 4: Coat the Potatoes

Add the potatoes to the bowl and toss well until all pieces are evenly coated with the glaze.

Step 5: Roast

Spread the potatoes in a single layer on the prepared baking sheet.
Roast for 35–45 minutes, flipping halfway through cooking, until golden brown and fork-tender.

Step 6: Finish and Serve

For extra caramelization, broil for 3–5 minutes at the end.
Garnish with fresh parsley and serve warm.

Cooking Tips

  • For extra crispiness, make sure the potatoes are not overcrowded on the baking sheet.
  • Add 1 tablespoon butter during the last 5 minutes for a richer flavor.
  • You can substitute maple syrup for honey if desired.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or air fryer to keep them crispy.
