Mini Meatloaf Muffins
Ingredients
- 2 lbs (about 900g) ground beef
- 1 small onion, finely chopped
- 1/2 green bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 large eggs
- 1/3 cup milk
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce (optional, but adds great flavor)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Topping (Optional)
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon mustard
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a muffin tin or use muffin liners.
- In a large bowl, combine the ground beef, onion, bell pepper, garlic, breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined (do not overmix).
- Divide the mixture evenly into the muffin tin cups, pressing gently to shape.
- If using the topping, mix ketchup, brown sugar, and mustard together and spoon a little over each meatloaf.
- Bake for 20–25 minutes, or until the meat is fully cooked and no longer pink inside.
- Let them rest for 5 minutes before removing from the pan.
Serve with mashed potatoes or a fresh salad.
