 Southern Sausage Biscuits

Flaky homemade biscuits stuffed with savory sausage — a true Southern comfort classic!

 Ingredients

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons cold unsalted butter (cut into small cubes)
  • ¾ cup cold buttermilk

For the Sausage Filling:

  • 1 pound breakfast sausage (pork sausage)

 Instructions

Step 1: Prepare the Sausage

  1. In a skillet over medium heat, cook the sausage until fully browned.
  2. Break it apart with a spoon as it cooks.
  3. Drain excess grease and set aside to cool slightly.

Step 2: Make the Biscuit Dough

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Add cold butter cubes and cut them into the flour using a pastry cutter or your fingers until mixture looks like coarse crumbs.
  4. Pour in cold buttermilk and gently mix until just combined (do not overmix).

Step 3: Assemble

  1. Turn dough onto a lightly floured surface.
  2. Pat into a ½-inch thick rectangle.
  3. Cut into circles using a biscuit cutter or glass.
  4. Flatten each piece slightly, add a spoonful of cooked sausage in the center, and fold dough over to seal.
    (Or simply place sausage between two biscuit halves.)

Step 4: Bake

  1. Place biscuits on a lined baking sheet.
  2. Bake for 12–15 minutes, or until golden brown.
  3. Brush tops with melted butter (optional but recommended ).

  • Total Time: 30 minutes

 Tips

  • Keep butter and buttermilk very cold for flaky biscuits.
  • For extra flavor, add a little shredded cheddar cheese inside.
  • You can freeze baked biscuits and reheat later.
