Southern Sausage Biscuits
Flaky homemade biscuits stuffed with savory sausage — a true Southern comfort classic!
Ingredients
For the Biscuits:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 6 tablespoons cold unsalted butter (cut into small cubes)
- ¾ cup cold buttermilk
For the Sausage Filling:
- 1 pound breakfast sausage (pork sausage)
Instructions
Step 1: Prepare the Sausage
- In a skillet over medium heat, cook the sausage until fully browned.
- Break it apart with a spoon as it cooks.
- Drain excess grease and set aside to cool slightly.
Step 2: Make the Biscuit Dough
- Preheat oven to 425°F (220°C).
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Add cold butter cubes and cut them into the flour using a pastry cutter or your fingers until mixture looks like coarse crumbs.
- Pour in cold buttermilk and gently mix until just combined (do not overmix).
Step 3: Assemble
- Turn dough onto a lightly floured surface.
- Pat into a ½-inch thick rectangle.
- Cut into circles using a biscuit cutter or glass.
- Flatten each piece slightly, add a spoonful of cooked sausage in the center, and fold dough over to seal.
(Or simply place sausage between two biscuit halves.)
Step 4: Bake
- Place biscuits on a lined baking sheet.
- Bake for 12–15 minutes, or until golden brown.
- Brush tops with melted butter (optional but recommended ).

Tips
- Keep butter and buttermilk very cold for flaky biscuits.
- For extra flavor, add a little shredded cheddar cheese inside.
