Creamed Chipped Beef (SOS) – A Depression-Era Classic
A simple, budget-friendly comfort food made with just 5 ingredients. Traditionally served over toast.
Ingredients
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup dried beef (chipped beef), chopped
- ½ teaspoon black pepper
Optional: salt to taste (dried beef is usually salty enough)
Instructions
- In a medium skillet over medium heat, melt the butter.
- Stir in the flour and cook for about 1 minute, whisking constantly to form a light roux.
- Slowly pour in the milk while whisking to prevent lumps.
- Continue cooking and stirring until the sauce thickens and becomes smooth and creamy.
- Add the chopped dried beef and black pepper.
- Simmer for 3–5 minutes until heated through and well combined.
How to Serve
Serve hot over:
- Toast (the traditional way)
- Buttermilk biscuits
- Mashed potatoes
- Rice
