An incredibly easy, comforting dish made with simple ingredients. Tender potato chunks slowly cooked with butter and sweet sliced onions create a rich, flavorful side dish your family will ask for again and again!
Ingredients
- 3 lbs (1.5 kg) potatoes, peeled and cut into large chunks
- 4 tablespoons butter, melted
- 1 large onion, thinly sliced
- 3 cloves garlic, minced (optional but recommended)
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 teaspoon dried herbs (thyme or parsley work great)
- ½ cup chicken broth or water
Optional for serving:
- Shredded cheese
- Fresh parsley
- Cooked chicken or beef
Instructions
Step 1: Prep the Ingredients
Peel and cut the potatoes into evenly sized chunks. Slice the onion thinly and mince the garlic if using.
Step 2: Layer in the Slow Cooker
Lightly grease the bottom of your slow cooker with butter or cooking spray.
Add a layer of potatoes, then some sliced onions and garlic.
Sprinkle with salt, pepper, and dried herbs.
Repeat the layers until all ingredients are used.
Step 3: Add Butter and Liquid
Pour the melted butter evenly over the potatoes.
Add the chicken broth (or water) to help create steam and prevent sticking.
Step 4: Cook
- Cook on LOW for 6–7 hours
or - Cook on HIGH for 3–4 hours
The potatoes should be fork-tender and infused with buttery onion flavor.
Optional Cheesy Finish
During the last 20 minutes of cooking, sprinkle shredded cheese on top and cover until melted.
