Ingredients

  • 1 lb (450g) shell pasta (or pasta of choice)
  • 1 lb (450g) sirloin steak or ribeye, cut into bite-sized pieces
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 cup (240ml) heavy cream
  • ½ cup beef broth (optional but recommended)
  • 1 cup shredded mozzarella or freshly grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • ½ teaspoon Italian seasoning (optional)
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

1. Cook the Pasta

Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

2. Sear the Steak

Heat olive oil in a large skillet over medium-high heat. Add steak pieces in a single layer. Sear for 2–3 minutes per side until browned and cooked to your preferred doneness. Season with salt and black pepper.

Remove steak from the skillet and set aside.

3. Make the Garlic Butter Sauce

In the same skillet, reduce heat to medium. Add butter and minced garlic. Sauté for about 30 seconds until fragrant (do not burn).

Pour in the heavy cream and beef broth. Stir and let simmer for 3–5 minutes until slightly thickened.

Add cheese and stir until melted and smooth.

4. Combine Everything

Return the steak to the skillet. Add the cooked pasta and toss until fully coated in the creamy sauce. If needed, add a splash of reserved pasta water to loosen the sauce.

Simmer together for 2–3 minutes.

5. Garnish & Serve

Sprinkle with fresh parsley and extra cheese if desired. Serve immediately while hot and creamy.

Tips for the Best Steak Pasta

  • Use a hot skillet to get a good sear on the steak.
  • Do not overcrowd the pan.
  • Let the steak rest briefly before adding it back to the sauce.
  • Freshly grated Parmesan melts better and gives deeper flavor.
