Neighbor Judy Chocolate Chip Cookies (No White Sugar)

Soft, thick, and perfectly puffy chocolate chip cookies made with all brown sugar for extra moisture and flavor.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven
    Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter and sugar
    In a large bowl, beat softened butter and brown sugar together for 2–3 minutes until light and fluffy.
  3. Add eggs and vanilla
    Mix in eggs one at a time. Add vanilla extract and mix until combined.
  4. Combine dry ingredients
    In a separate bowl, whisk together flour, baking soda, and salt.
  5. Mix dough
    Gradually add dry ingredients to wet ingredients. Mix just until combined.
    Fold in chocolate chips.
  6. Chill (important for puffiness!)
    Chill dough for at least 30–60 minutes to prevent spreading.
  7. Bake
    Scoop dough into balls (about 2 tablespoons each) and place on baking sheet.
    Bake for 9–11 minutes, until edges are golden but centers look slightly soft.
  8. Cool
    Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Tips for Thick & Puffy Cookies

  • Do NOT melt the butter — it must be softened only.
  • Chill the dough before baking.
  • Slightly underbake for soft centers.
