Mini Chicken Salad Croissants
These mini chicken-salad croissants are creamy, fresh, and perfect for family gatherings, brunches, baby showers, or quick snacks. They’re easy to prepare and always disappear fast!
Ingredients
- 3 cups cooked chicken breast, shredded or finely chopped
- 1 cup mayonnaise
- 1/2 cup celery, finely diced
- 1/3 cup red onion, finely diced
- 1/2 cup red seedless grapes, halved (optional but recommended)
- 1/4 cup sliced almonds or chopped pecans (optional)
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 12 mini croissants
- Lettuce leaves (optional, for serving)
Instructions
- Prepare the chicken
Cook and cool the chicken if not already prepared. Shred or finely chop it into small pieces. - Mix the salad
In a large bowl, combine mayonnaise, Dijon mustard, lemon juice, salt, and black pepper. Stir until smooth. - Add mix-ins
Add the chicken, celery, red onion, grapes, and nuts. Mix gently until everything is well coated. - Chill
Cover and refrigerate for at least 30 minutes to allow flavors to blend. - Assemble the croissants
Slice mini croissants in half. Add a small lettuce leaf if desired, then spoon chicken salad inside. - Serve
Serve immediately or keep refrigerated until ready to serve.
Tips
- You can use rotisserie chicken for extra flavor and convenience.
- For a lighter version, substitute half of the mayonnaise with Greek yogurt.
- Add dried cranberries instead of grapes for a sweet twist.
