Easy Homemade Blueberry Biscuits Recipe

These soft and fluffy blueberry biscuits are golden on the outside, tender on the inside, and bursting with juicy blueberries. Finished with a sweet vanilla glaze, they make the perfect breakfast, snack, or dessert.

Ingredients

For the Biscuits:

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup milk or buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

For the Glaze (Optional):

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into the flour mixture until it resembles coarse crumbs.
  4. Add milk and vanilla extract, stirring just until a soft dough forms.
  5. Gently fold in the blueberries, being careful not to crush them.
  6. Turn the dough onto a floured surface, lightly knead, and pat into a 1-inch thick rectangle.
  7. Cut into round or square biscuits and place them on the baking sheet.
  8. Bake for 15–18 minutes, or until golden brown.

Make the Glaze

In a small bowl, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled biscuits.
