Pecan Pie Muffins

Mini muffins with the gooey, sweet flavor of classic pecan pie — perfect for dessert or coffee time.

Ingredients

  • 1 cup chopped pecans
  • ¾ cup brown sugar
  • ¼ cup melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • Optional: extra pecans for topping

Instructions

  1. Preheat oven to 175°C (350°F). Grease or line a muffin tin.
  2. In a bowl, whisk eggs, brown sugar, melted butter, and vanilla.
  3. Add flour and salt, mix until just combined.
  4. Fold in chopped pecans.
  5. Spoon batter into muffin cups (about ¾ full).
  6. Optional: add extra pecans on top.
  7. Bake for 18–22 minutes, until golden and set in the center.
  8. Cool slightly before serving.

Tips

  • For extra gooey muffins, slightly reduce flour (by 1 tbsp).
  • Serve warm with whipped cream or vanilla ice cream
  • You can add a pinch of cinnamon for more flavor.
