Country Ranch Green Beans ‘n Potatoes with Bacon

Description

Tender green beans and soft potatoes cooked with crispy bacon and ranch seasoning for a rich, smoky, and herby country-style side dish. Perfect with chicken, steak, or as a hearty comfort meal.

Ingredients

  • 4 cups fresh green beans (trimmed)
  • 3–4 medium potatoes (peeled and diced)
  • 6 slices bacon (chopped)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 packet ranch seasoning mix (or 2 tablespoons homemade ranch seasoning)
  • 1 cup chicken broth (or water)
  • 2 tablespoons butter (optional, for richness)
  • Salt and black pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Cook the Bacon
    In a large skillet or pot over medium heat, cook the chopped bacon until crispy.
    Remove bacon and set aside, leaving the bacon grease in the pan.
  2. Sauté Onion & Garlic
    Add diced onion to the bacon grease and cook until soft (about 3 minutes).
    Stir in minced garlic and cook for 30 seconds.
  3. Add Potatoes & Green Beans
    Add diced potatoes and green beans to the pot. Stir to coat in the flavorful bacon grease.
  4. Season & Simmer
    Sprinkle in the ranch seasoning mix.
    Pour in the chicken broth.
    Bring to a boil, then reduce heat, cover, and simmer for 20–25 minutes until potatoes and beans are tender.
  5. Finish the Dish
    Stir in cooked bacon and butter (optional).
    Taste and season with salt and pepper if needed.
  6. Serve
    Garnish with fresh parsley and serve warm.

Tips & Variations

  • Extra creamy: Stir in ¼ cup sour cream or cream cheese at the end.
  • Spicy version: Add red pepper flakes or diced jalapeño.
  • Slow cooker option: Cook on LOW for 4–5 hours or HIGH for 2–3 hours.
  • Meaty add-on: Add diced ham or smoked sausage for a heartier meal.
