Ingredients

  • 3–4 lbs potatoes (Yukon Gold or red potatoes), washed and cut into chunks
  • 2 tablespoons butter or olive oil
  • 1 cup heavy cream
  • ½ cup milk or chicken broth
  • 4 oz cream cheese, softened (optional but recommended)
  • ½ cup shredded cheese (Parmesan or cheddar)
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning (or thyme + rosemary)
  • 2 tablespoons chopped chives or parsley
  • Optional: ½ cup cooked bacon or diced ham

Instructions

  1. Prepare the potatoes
    Wash and chop the potatoes into evenly sized chunks so they cook evenly.
  2. Add potatoes to slow cooker
    Place the potatoes into the slow cooker and drizzle with butter or olive oil.
  3. Season the potatoes
    Add salt, pepper, garlic powder, onion powder, minced garlic, and Italian seasoning. Stir to coat evenly.
  4. Make the creamy sauce
    In a bowl, whisk together heavy cream, milk (or broth), cream cheese, and shredded cheese until smooth.
  5. Pour over potatoes
    Pour the creamy sauce evenly over the potatoes.
  6. Cook low and slow
    Cover and cook:

    • On LOW for 5–6 hours, or
    • On HIGH for 3–4 hours,
      until potatoes are fork-tender.
  7. Stir and finish
    Gently stir the potatoes to coat them in the creamy sauce. Taste and adjust seasoning if needed.
  8. Garnish and serve
    Sprinkle chopped chives or parsley on top and serve warm.
