Cheesy Stuffed Meatloaf Bites
Juicy, cheesy, and perfectly bite-sized! These mini meatloaf bites are stuffed with melted cheese and baked until golden—great for dinner, parties, or meal prep.
Ingredients
- 1 lb (450 g) ground beef
(or a mix of beef and pork) - 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1 tablespoon ketchup
- 1 tablespoon Worcestershire sauce
For the filling:
- Mozzarella or cheddar cheese, cut into small cubes
Optional topping:
- Extra ketchup or BBQ sauce
Instructions
- Preheat the oven to 180°C / 350°F. Lightly grease a muffin tin or line it with parchment cups.
- In a large bowl, mix the ground meat, breadcrumbs, Parmesan, egg, milk, onion, garlic, salt, pepper, paprika, Italian seasoning, ketchup, and Worcestershire sauce until just combined.
- Take a small portion of the meat mixture and flatten it in your hand.
- Place a cube of cheese in the center, then wrap the meat around it and roll into a ball.
- Place each meatball into the muffin tin.
- If desired, brush or spoon a little ketchup or BBQ sauce on top.
- Bake for 20–25 minutes, until cooked through and lightly browned.
- Let rest for a few minutes before serving.
