Cheesy Stuffed Meatloaf Bites

Juicy, cheesy, and perfectly bite-sized! These mini meatloaf bites are stuffed with melted cheese and baked until golden—great for dinner, parties, or meal prep.

Ingredients

  • 1 lb (450 g) ground beef
    (or a mix of beef and pork)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce

For the filling:

  • Mozzarella or cheddar cheese, cut into small cubes

Optional topping:

  • Extra ketchup or BBQ sauce

 Instructions

  1. Preheat the oven to 180°C / 350°F. Lightly grease a muffin tin or line it with parchment cups.
  2. In a large bowl, mix the ground meat, breadcrumbs, Parmesan, egg, milk, onion, garlic, salt, pepper, paprika, Italian seasoning, ketchup, and Worcestershire sauce until just combined.
  3. Take a small portion of the meat mixture and flatten it in your hand.
  4. Place a cube of cheese in the center, then wrap the meat around it and roll into a ball.
  5. Place each meatball into the muffin tin.
  6. If desired, brush or spoon a little ketchup or BBQ sauce on top.
  7. Bake for 20–25 minutes, until cooked through and lightly browned.
  8. Let rest for a few minutes before serving.

  • Great with a dipping sauce (ketchup, BBQ, or garlic sauce)
  • Perfect as appetizers or lunchbox bites
