Easy Sausage Muffins

Ingredients

  • 1 lb breakfast sausage (pork or turkey)
  • 1 cup shredded cheddar cheese
  • 1 cup Bisquick (or any baking mix)
  • 2 large eggs
  • ¼ cup milk
  • ½ tsp black pepper (optional)
  • ¼ tsp garlic powder or onion powder (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. Cook the sausage in a skillet over medium heat until fully browned. Drain excess grease.
  3. In a large bowl, mix Bisquick, eggs, and milk until just combined.
  4. Stir in cooked sausage and shredded cheese. Add seasonings if using.
  5. Spoon the mixture evenly into muffin cups (about ¾ full).
  6. Bake for 18–22 minutes, until golden and set.
  7. Let cool slightly… then enjoy

Tips

  • Add chopped green onions or bell peppers for extra flavor
  • Freeze well! Just reheat in the microwave for busy mornings
  • Swap cheddar for mozzarella or pepper jack if you’re feeling wild
