Low-Carb Bacon Cheddar Mini Cheese Balls

Ingredients

  • 8 oz (225 g) cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 6 slices bacon, cooked until crispy and finely crumbled
  • 2 tablespoons green onions or chives, finely chopped
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • Salt to taste (optional)

For coating (optional):

  • Extra bacon crumbs
  • Chopped parsley or chives
  • Crushed nuts (almonds or pecans – low carb)

Instructions

  1. In a medium bowl, mix the softened cream cheese until smooth.
  2. Add the shredded cheddar cheese, bacon crumbles, green onions, garlic powder, onion powder, and black pepper. Mix well until fully combined.
  3. Taste and add salt if needed.
  4. Cover the mixture and refrigerate for 20–30 minutes to make it easier to handle.
  5. Scoop small portions and roll into mini balls using your hands.
  6. Roll the cheese balls in extra bacon crumbs, herbs, or nuts if desired.
  7. Chill for another 15 minutes before serving.
