 No-Bake Cheesecake

Ingredients

For the crust

  • 200 g digestive biscuits (or graham crackers)
  • 100 g unsalted butter, melted

For the filling

  • 16 oz (450 g) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream (cold)
  • 1 tablespoon lemon juice (optional, for freshness)

Optional toppings

  • Strawberry or blueberry sauce
  • Fresh fruit
  • Chocolate or caramel drizzle

Instructions

  1. Make the crust
    Crush the biscuits into fine crumbs.
    Mix with melted butter until combined.
    Press firmly into the bottom of a 9-inch springform pan.
    Refrigerate for 20–30 minutes to set.
  2. Prepare the filling
    In a large bowl, beat the cream cheese until smooth.
    Add powdered sugar, vanilla, and lemon juice. Mix until creamy.
  3. Whip the cream
    In a separate bowl, whip the cold heavy cream until stiff peaks form.
  4. Combine
    Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  5. Assemble
    Spread the filling over the chilled crust and smooth the top.
  6. Chill
    Refrigerate for at least 4 hours (overnight is best).
  7. Serve
    Add your favorite topping before slicing.

Tips

  • For extra firmness, chill overnight
  • Want it sweeter or lighter? Adjust sugar or cream
  • Works perfectly with Oreo, Lotus, or chocolate crusts
