Crispy Shrimp Patties with Zesty Chili Lime Mayo
Ingredients:
1 pound shrimp, peeled, deveined, and finely chopped
1/2 cup breadcrumbs
1 large egg, beaten
2 green onions, finely chopped
1 clove garlic, minced
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil for frying
For the Chili Lime Mayo:
1/2 cup mayonnaise
1 tablespoon chili sauce
Juice of 1 lime
1 teaspoon lime zest
1/2 teaspoon honey
Directions:
1. In a large bowl, combine the finely chopped shrimp, breadcrumbs, beaten egg, green onions, minced garlic, paprika, salt, and pepper. Mix until well combined.
2. Form the mixture into small patties, about 2 inches in diameter.
3. Heat the olive oil in a large skillet over medium heat. Fry the shrimp patties for 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.
4. In a small bowl, whisk together the mayonnaise, chili sauce, lime juice, lime zest, and honey until smooth.
5. Serve the shrimp patties hot, accompanied by the tangy chili lime mayo. Garnish with extra lime zest or chopped green onions if desired.
