 Bang Bang Chicken Fried Rice

Sweet, spicy, crispy chicken meets sizzling veggies and golden fried rice — all in one epic pan dinner!

 Ingredients

Chicken

  • 1½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup cornstarch
  • Oil for frying

Bang Bang Sauce

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1–2 tablespoons sriracha (adjust to taste )
  • 1 tablespoon honey or sugar
  • 1 teaspoon rice vinegar or lemon juice

Fried Rice

  • 3 cups cooked rice (cold, day-old rice works best )
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced

 Instructions

  1. Prepare the Chicken
    In a bowl, season chicken with paprika, garlic powder, salt, and pepper. Toss with cornstarch until well coated.
  2. Fry the Chicken
    Heat oil in a pan over medium-high heat. Fry chicken until golden and crispy (about 5–7 minutes). Remove and set aside.
  3. Make the Bang Bang Sauce
    In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, and vinegar. Set aside.
  4. Cook the Fried Rice
    Heat 2 tablespoons oil in a large skillet or wok.
    Add eggs and scramble lightly.
    Add garlic and vegetables, stir-fry for 1–2 minutes.
    Add rice, soy sauce, and sesame oil. Stir and fry until hot and slightly crispy.
  5. Combine Everything
    Add crispy chicken to the rice. Drizzle with Bang Bang sauce and toss until well coated.
  6. Finish & Serve
    Garnish with green onions. Serve hot and enjoy!

Tips

  • Add chili flakes for extra heat
  • Swap chicken for shrimp if you like
  • Serve with cucumber salad for balance
