Mongolian Ground Beef Noodles

Sweet, savory, and packed with flavor! This quick noodle dish is perfect for busy weeknights and tastes better than takeout.

 Ingredients

🔹 Main:

  • 8 oz (225 g) noodles (lo mein, spaghetti, or egg noodles)
  • 1 lb (450 g) ground beef
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (or ½ tsp ground ginger)

🔹 Sauce:

  • ½ cup low-sodium soy sauce
  • ½ cup brown sugar
  • 1 cup beef broth or water
  • 1 tablespoon hoisin sauce (optional but recommended)
  • 1 teaspoon cornstarch + 1 tablespoon water (slurry)

 Optional Add-ins:

  • 1 cup green onions, sliced
  • ½ teaspoon red pepper flakes (optional)
  • Sesame seeds for garnish

 Instructions

  1. Cook the Noodles
    • Cook noodles according to package instructions.
    • Drain and set aside.
  2. Brown the Beef
    • Heat oil in a large skillet or wok over medium-high heat.
    • Add ground beef and cook until browned, breaking it apart.
    • Drain excess fat if needed.
  3. Add Aromatics
    • Stir in garlic and ginger.
    • Cook for about 30 seconds until fragrant.
  4. Make the Sauce
    • Add soy sauce, brown sugar, beef broth, and hoisin sauce.
    • Bring to a gentle simmer.
  5. Thicken
    • Stir in the cornstarch slurry.
    • Cook until the sauce thickens (about 2–3 minutes).
  6. Combine
    • Add cooked noodles to the skillet.
    • Toss well until noodles are coated in sauce.
  7. Finish & Serve
    • Stir in green onions and red pepper flakes if using.
    • Garnish with sesame seeds and serve hot.

 Tips & Variations

  • Add veggies like bell peppers, broccoli, or snap peas
  • Swap ground beef for ground chicken or turkey
  • Like it spicy? Add sriracha or chili oil
