STUFFED BUTTER & CHEESE BAKED POTATOES

These stuffed baked potatoes are the ultimate comfort food — fluffy on the inside, crispy on the outside, loaded with butter, melted cheese, and rich flavor. Perfect as a main dish or a hearty side!
INGREDIENTS
- 4 large baking potatoes (Russet potatoes work best)
- 4 tablespoons butter, softened
- 1 cup shredded cheddar cheese (or cheese of choice)
- ½ cup shredded mozzarella cheese
- ½ cup sour cream (optional but recommended)
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- Optional toppings:
- Chopped green onions or chives
- Cooked bacon bits
- Fresh parsley
INSTRUCTIONS
PREHEAT THE OVEN
Preheat the oven to 400°F (200°C).
BAKE THE POTATOES
Wash and scrub the potatoes well.
Dry them, then pierce each potato several times with a fork.
Place directly on the oven rack or on a baking tray.
Bake for 50–60 minutes, until the skins are crispy and a fork slides in easily.
SCOOP THE POTATOES
Remove potatoes from the oven and let cool slightly.
Cut each potato lengthwise.
Carefully scoop out the inside into a bowl, leaving a sturdy shell.
MIX THE FILLING
To the potato flesh, add:
- Butter
- Sour cream
- Garlic powder
- Salt and pepper
Mash until smooth and creamy.
Stir in most of the cheddar and mozzarella cheeses (reserve some for topping).
STUFF THE POTATOES
Spoon the creamy mixture back into the potato skins.
Top with the remaining shredded cheese.
BAKE AGAIN
Return the stuffed potatoes to the oven.
Bake for 15–20 minutes, or until the cheese is melted, bubbly, and lightly golden.
SERVE
Garnish with green onions, parsley, or bacon bits if desired.
