 Country Ranch Green Beans ’n Potatoes with Bacon

A cozy, down-home side dish that goes with everything.

Ingredients

  • 1 lb (450 g) fresh green beans, trimmed
  • 1½ lbs (700 g) baby potatoes, halved or quartered
  • 6 slices bacon, chopped
  • 1 small onion, diced (optional but sooo good)
  • 2 cloves garlic, minced
  • 1 packet (1 oz) ranch seasoning mix
  • 2 tbsp olive oil or butter
  • Salt & black pepper, to taste
  • ½ cup chicken broth or water (optional, for extra tenderness)

 Instructions

  1. Cook the Bacon
    In a large skillet or pot over medium heat, cook the chopped bacon until crispy.
    Remove bacon and set aside, leaving the drippings in the pan.
  2. Sauté the Aromatics
    Add onion to the bacon drippings and cook until soft (about 3–4 minutes).
    Stir in garlic and cook for 30 seconds.
  3. Add Potatoes
    Toss in the potatoes, drizzle with olive oil or butter if needed, and season lightly with salt and pepper.
    Cover and cook for 8–10 minutes, stirring occasionally.
  4. Add Green Beans
    Add green beans and sprinkle the ranch seasoning over everything.
    Stir well to coat.
  5. Simmer
    Pour in chicken broth or water (optional).
    Cover and cook for 12–15 minutes, until potatoes are fork-tender and beans are soft.
  6. Finish
    Stir the crispy bacon back in. Taste and adjust seasoning.

 Optional Add-Ins

  • A pinch of red pepper flakes
  • Shredded cheddar or Parmesan
  • A squeeze of lemon juice for brightness
