Country Ranch Green Beans ’n Potatoes with Bacon
A cozy, down-home side dish that goes with everything.
Ingredients
- 1 lb (450 g) fresh green beans, trimmed
- 1½ lbs (700 g) baby potatoes, halved or quartered
- 6 slices bacon, chopped
- 1 small onion, diced (optional but sooo good)
- 2 cloves garlic, minced
- 1 packet (1 oz) ranch seasoning mix
- 2 tbsp olive oil or butter
- Salt & black pepper, to taste
- ½ cup chicken broth or water (optional, for extra tenderness)
Instructions
- Cook the Bacon
In a large skillet or pot over medium heat, cook the chopped bacon until crispy.
Remove bacon and set aside, leaving the drippings in the pan. - Sauté the Aromatics
Add onion to the bacon drippings and cook until soft (about 3–4 minutes).
Stir in garlic and cook for 30 seconds. - Add Potatoes
Toss in the potatoes, drizzle with olive oil or butter if needed, and season lightly with salt and pepper.
Cover and cook for 8–10 minutes, stirring occasionally. - Add Green Beans
Add green beans and sprinkle the ranch seasoning over everything.
Stir well to coat. - Simmer
Pour in chicken broth or water (optional).
Cover and cook for 12–15 minutes, until potatoes are fork-tender and beans are soft. - Finish
Stir the crispy bacon back in. Taste and adjust seasoning.
Optional Add-Ins
- A pinch of red pepper flakes
- Shredded cheddar or Parmesan
- A squeeze of lemon juice for brightness
