Peanut Butter Chocolate Chip Cookie Bars
Ingredients
- 1 cup peanut butter (creamy or chunky)
- ½ cup unsalted butter, softened
- 1 cup brown sugar, packed
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 to 1½ cups chocolate chips (semi-sweet or milk)
Preparation
1. Prep the Oven
- Preheat oven to 175°C / 350°F
- Line a 9×13 inch (23×33 cm) baking pan with parchment paper or grease well.
2. Make the Batter
- In a large bowl, cream together peanut butter, butter, and brown sugar until smooth.
- Add vanilla extract and eggs, mix until fully combined.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture.
- Fold in the chocolate chips.
3. Bake
- Spread the batter evenly into the prepared pan.
- Bake for 22–28 minutes, until the top is lightly golden and a toothpick comes out with a few moist crumbs.
4. Cool & Slice
- Let cool completely in the pan.
- Cut into squares or bars.
Tips
- For extra gooey bars: slightly underbake.
- For thicker bars: use an 8×8 pan and bake a few minutes longer.
- Sprinkle a little sea salt on top before baking for a sweet-salty touch.
