Prime Rib Roast (Standing Rib Roast)
Juicy, tender, and perfectly pink in the center, this Prime Rib Roast is a classic oven-roasted beef dish with a beautifully seasoned crust
Perfect for special occasions or a luxurious family dinner.
Ingredients
- 2–3 kg Prime Rib / Ribeye Roast
- 2 tbsp olive oil or melted butter
- 4 garlic cloves, minced
- 1 tbsp coarse salt
- 1 tsp black pepper
- 1 tsp dried thyme
- 1 tsp rosemary
- (Optional) 1 tbsp Dijon mustard
Instructions
Prepare the Meat
- Remove the meat from the refrigerator 1 hour before cooking to bring it to room temperature.
- Pat dry with paper towels.
- Rub with olive oil or butter.
- Mix garlic, salt, pepper, thyme, and rosemary.
- Massage the seasoning all over the roast.
- (Optional) Lightly coat with Dijon mustard for extra flavor.
Roast the Beef
- Preheat oven to 220°C / 425°F.
- Place the roast on a rack in a roasting pan.
- Roast for 20 minutes to create a crust.
- Reduce oven temperature to 170°C / 340°F.
- Continue roasting:
- 15 minutes per 500 g (1 lb) for medium-rare
- Internal temperature should reach 52–55°C / 125–130°F.
Rest the Meat (Very Important)
- Remove from oven and loosely cover with foil.
- Let rest for 15–20 minutes so the juices redistribute.
Serve
- Slice into thick pieces.
- Serve with:
- Roasted potatoes
- Vegetables
- Peppercorn sauce or beef gravy
