 Mozzarella Stuffed Bacon Wrapped Meatloaf

A juicy, cheesy meatloaf wrapped in crispy bacon—perfect for family dinners or special occasions!

 Ingredients

Meatloaf

  • 1½ lb ground beef (or beef blend)
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning

Filling

  • 8 oz mozzarella cheese (block or shredded)

Wrap

  • 10–12 slices bacon

Topping (optional)

  • ¼ cup ketchup
  • 2 tbsp BBQ sauce

 Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  2. In a large bowl, mix ground beef, breadcrumbs, eggs, onion, garlic, milk, ketchup, Worcestershire sauce, and all seasonings until just combined (don’t overmix).
  3. Place the meat mixture on the prepared sheet and shape it into a rectangle.
  4. Add mozzarella cheese in the center, lengthwise.
  5. Carefully fold the meat over the cheese and seal the edges, forming a loaf.
  6. Lay bacon slices over the meatloaf, slightly overlapping, covering the entire loaf.
  7. Brush the top with the ketchup/BBQ sauce mixture if using.
  8. Bake uncovered for 50–60 minutes, or until internal temperature reaches 160°F (71°C).
  9. For extra crispy bacon, broil for 3–5 minutes at the end.
  10. Let rest 10 minutes before slicing.

  • Serve with mashed potatoes, roasted vegetables, or a fresh green salad.
  • Perfect with a light garlic sauce or simple gravy.
