Mozzarella Stuffed Bacon Wrapped Meatloaf
A juicy, cheesy meatloaf wrapped in crispy bacon—perfect for family dinners or special occasions!
Ingredients
Meatloaf
- 1½ lb ground beef (or beef blend)
- 1 cup breadcrumbs
- 2 large eggs
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- ½ cup milk
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp Italian seasoning
Filling
- 8 oz mozzarella cheese (block or shredded)
Wrap
- 10–12 slices bacon
Topping (optional)
- ¼ cup ketchup
- 2 tbsp BBQ sauce
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
- In a large bowl, mix ground beef, breadcrumbs, eggs, onion, garlic, milk, ketchup, Worcestershire sauce, and all seasonings until just combined (don’t overmix).
- Place the meat mixture on the prepared sheet and shape it into a rectangle.
- Add mozzarella cheese in the center, lengthwise.
- Carefully fold the meat over the cheese and seal the edges, forming a loaf.
- Lay bacon slices over the meatloaf, slightly overlapping, covering the entire loaf.
- Brush the top with the ketchup/BBQ sauce mixture if using.
- Bake uncovered for 50–60 minutes, or until internal temperature reaches 160°F (71°C).
- For extra crispy bacon, broil for 3–5 minutes at the end.
- Let rest 10 minutes before slicing.
