Smothered Cheesy Sour Cream Chicken

Creamy, cheesy, and packed with flavor—this is pure comfort food made easy!

 Ingredients

  • 4 boneless chicken breasts or thighs
  • 1 tbsp olive oil or butter
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt (or to taste)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (or mozzarella/Colby Jack)
  • ½ cup chicken broth
  • 1 tsp dried parsley or thyme (optional)

Instructions

  1. Season the Chicken
    Pat chicken dry. Season both sides with paprika, garlic powder, onion powder, salt, and pepper.
  2. Sear
    Heat olive oil or butter in a large skillet over medium heat.
    Sear chicken 3–4 minutes per side until lightly golden (not fully cooked). Remove and set aside.
  3. Make the Sauce
    Lower heat. Add chicken broth to the skillet and scrape up browned bits.
    Stir in sour cream until smooth.
  4. Smother & Cook
    Return chicken to the skillet. Spoon sauce over the top.
    Cover and simmer 15–20 minutes until chicken is cooked through.
  5. Add Cheese
    Sprinkle shredded cheese over chicken. Cover again and cook 3–5 minutes until melted and bubbly.

Serving Suggestions

  • Serve over rice, mashed potatoes, or pasta
  • Pair with steamed broccoli, green beans, or a fresh salad
