Slow Cooker Ham & Potato Casserole
Cheesy, cozy, and effortless—just dump, cook, and enjoy!
Ingredients
- 30 oz frozen hash brown potatoes (cubed or shredded)
- 1 can (10.75 oz) cream of chicken soup
- 1 cup sour cream
- 2 cups cooked ham, diced
- 2 cups shredded cheddar cheese (or cheddar-jack blend)
- ½ cup milk
- ½ small onion, finely diced (optional)
- 1 tsp garlic powder
- ½ tsp black pepper
- ½ tsp paprika
- Salt to taste
- 2 tbsp melted butter (optional, for extra richness)
Instructions
- Spray the slow cooker with non-stick spray.
- In a large bowl, mix cream of chicken soup, sour cream, milk, garlic powder, pepper, paprika, and salt.
- Add hash browns, diced ham, onion (if using), and 1½ cups of the cheese. Stir well.
- Pour everything into the slow cooker and spread evenly.
- Cover and cook:
- Low: 5–6 hours
- High: 2½–3 hours
- About 20–30 minutes before serving, sprinkle the remaining ½ cup cheese on top. Cover until melted.
- Let rest 5–10 minutes, then serve warm
